This is a straight forward dish that’s somewhat KETO friendly if you use the low carb tortillas. We needed a higher carb intake for dinner so opted for this. I say it’s KETO friendly because there’s not much to it other than chicken, peppers, onions, seasoning, cheese and bread. Now I did add some chorizo to mine since I love it so. This was around 11 carbs, or less, for me and I loved every minute of it.
Chicken Fajita Burritos
Use Low Carb Tortillas
- 1 bonless chicken breast, butterflied
- 1 pkg peppers & onions, frozen
- 1 pkg fajitas seasoning
- 2 tbsp vegetable oil
- 4 tortillas low carb
- 8oz container white mexican melted cheese dip
Preheat frying pan over medium heat. While pan is preheating, In a Ziploc bag, add diced chicken and half of the fajitas seasoning mixture along with 1 tbsp vegetable oil. Shake well and add to frying pan in a single layer.
Saute chicken for 3-4 minutes per side then remove from pan once cooked through.
Add 1 tbsp vegetable oil to pan along with frozen peppers & onion mixture. Add diced chicken and remaining fajitas seasoning. Stir and allow to cook down 7-8 minutes, string frequently. Set aside once cooked through.
Microwave the Mexican cheese dip per instructions. Place chicken and pepper mixture in tortilla, fold and cover with melted cheese.
I fried up a small amount of chorizo and added inside and on top pf my burrito.
